HOT CIDER AND CINNAMON WHIPPED CREAM

Here are two simple recipes to add a little zest to the Thanksgiving table. They can add zest to  any table, but particularly on a cold winter's night.  Hot Cider also helps colds and flu symptoms and generally warms the weary soul.  The whipped cream goes well with Pumpkin Pie or anything that cinnamon complements.  You might even put the whipped cream on top of the cider.

HOT CIDER

Ingredients:

1/2 gallon apple cider [ 8 cups]
1/2 cup fresh lemon juice, plus 1 strip of zest
1/2 cup fresh orange juice, plus 1 strip of zest
3 cinnamon sticks
4 whole cloves
1 tablespoon unsalted butter, softened. [optional]
Whiskey, rye, bourbon [ optional]
Cinnamon candy sticks, for garnish [optional]

Directions:

  1. Combine the cider, citrus juices and zest, cinnamon sticks and clovs in a large pot. Simmer of medium heat, about 20 minutes, do not boil
  2. Ladle the cider into mugs, leaving the zest and spices in the pot, and add about 1/2 teaspoon butter to teach mug. 
  3. Spike the adults' drink with a shot of bourbon and garnish with cinnamon candy sticks.

CINNAMON WHIPPED CREAM

Ingredients:
2 cups heavy cream
1/4 cup sugar
1 1/2 teaspon ground cinnamon
1/2 teaspoon vanilla extract

Directions:

Pour heavy cream into chilled glass or metal bowl.
Beat on High speed. Slowly add sugar, cinnamon and vanilla.
Continue beating until s tiff peaks form
Tip: Place bowl, beaters or whisk inside freezer for about 30 minutes before using them.
