This salad is so easy and great for left-over turkey from the holidays. This tasty addition to any meal is a favorite for the family. Serve with colorful plates and different colors of lettuce. I prefer Bibb or Boston lettuce for this salad, but endive or romaine would also be great. Many of these items can be bought pre-diced, even the ham or chicken. this is another recipes that is tasty and quick for a healthy meal. Serve with some good bread and dessert.
Ingredients:
10-12 ounces smoked turkey or chicken or even ham
1/4 cup pine nuts
1/2 cup onions, bell peppers, celery - diced
1 head Boston Bibb lettuce, cored and rinsed
1 [8 ounce] can pineapple tidbits [ drained]
1/3 cup light mayonnaise
1/4 teaspoon herb-seasoned salt
1/8 teaspoon pepper
Directions:
Cut turkey or meat into bit-size pieces.
Combine pine nuts, onions, bell peppers, celery, pineapple tidbits, mayonnaise, herb-seasoned salt and pepper in a medium bowl
Arrange lettuce leaves on salad plates or serving platter; mound salad mixture over lettuce and serve.
Also serve this salad with a large tray of fruit and an assortment of cheeses and crackers. The possibilities are endless in making this salad the main course of the meal, and not spend all day in the kitchen. You can also make corn muffins in the small muffin tins. The small, nonstick muffin tins makes more muffins and goes well with any type of salad.
