LAYERED SALAD

This salad is a staple for most cooks.  It is a make ahead recipe.  It is always good and most people find it attractive and very tasty.  This salad is a staple because you can have all the ingredients on hand all the time and if unexpected company or if you are too busy to cook, this salad can almost be a meal with some french garlic bread and ice cream with fruit for dessert.

Ingredients:

3/4 head iceberg lettuce
1/2 cup celery, chopped
1/2 cup green pepper, chopped
1/2 cup red onion, chopped
1 [ 10 ounce] package frozen green peas, cooked and cooled
1/2 cup sugar
1 cup sharp cheddar cheese, grated
1 cup mayonnaise
1 pound package bacon, cooked very crispy and crumbled.

Directions:

In a large bowl, layer lettuce, celery, green pepper, onion and peas.  Cover all with mayonnaise.  Sprinkle with sugar, then cover with grated cheese.  Cover with crumbled bacon. Cover tightly and refrigerate overnight.  Toss and serve.  This recipe is a great recipe for making ahead if your schedule is hectic.

Tip for cooking the bacon:
Put the entire pound of  bacon on a cookie sheet in the oven on 400 degrees, spread pieces out so they are flat, and cook for about 15 minutes or until crispy. This is also a great tip for making bacon, lettuce and tomato sandwiches  because bacon can be cooked at one tip and you do not have to stand over the frying pan.  It is much better bacon than bacon cooked in the microwave.
