BASIC QUICHE
Ingredients: 1/2 pound grated Pepper Jack cheese
8 beaten eggs
1 pound bulk hot sausage [ if prefer, use mild]
1 cup milk
1 cup Bisquick
Salt and pepper to taste
Directions:
Cook sausage in skillet. Drain Well. Add other ingredients and mix well. Pour into a 2-quart, oblong Pyrex dish and bake at 375 degrees until solid. Cool; cut into squares. Yield: 6-8 servings.
BLENDER QUICHE
Ingredients:1/2 cup Biscuit mix
3 tablespoons butter
4 eggs
2 cups milk
1/2 pound Swiss Cheese
1 teaspoon salt
Optional items: Bacon bits, ham, asparagus or broccoli
Directions:
Put all ingredients into blender except optional ingredients and blend. Pour mixture into greased pan, then add optional ingredients. Bake at 400 degrees for 30-40 minutes. Yield: 1 pie [9 inch]
You can double these ingredients for 2 pies.
POTATO CRUST QUICHE
Ingredients:
1 [ 30 ounces] package frozen has brown potatoes, thawed and squeezed dry
1/3 cup butter, melted
1 [ 8 ounce] package Canadian-style bacon, diced
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
6 large eggs
1/4 cup half-and-half
1/2 teaspoon salt
1/2 teaspoon ground black pepper.
Directions:
Preheat oven to 425 degrees. Lightly grease a 9-inch, deep-dish pie plate. Firmly press potatoes into bottom and up sides of prepared pie plate to form crust of quiche. Pour melted butter evenly over crust. Bake for 30-35 minutes or until lightly browned. Reduce oven temperature to 350 degrees. Sprinkle Canadian-style bacon and cheese evenly over potatoes. In a small bowl, whisk together eggs, half-and-half, salt and pepper. Pour over Canadian-style bacon and cheese. Bake for 30 minutes or until puffed and set. Yield: 8 servings.
