ENGLISH PEA SALAD
These two salads are pea salads. Children will say "yuck", but these salads are very good and they will like them if you can get them to taste them. They are refreshing and pretty to serve.
Ingredients:
1 [ 15 ounce ] can baby peas, drained.
1 [ 11 ounce] can shoe peg white corn, drained
1 [ 14 1/2 ounce ] can French-style green beans, drained.
1 green pepper, chopped
1 [2 ounce] jar diced pimentos, drained.
Marinade:
3/4 cup vinegar
1/2 cup vegetable oil
1 cup sugar
1 teaspoon pepper
1 teaspoon salt
1 teaspoon water
Bring marinade to a boil, cool and pour over combined vegetables. Serve chilled.
ENGLISH PEA, CHEESE AND BACON SALAD
Ingredients:
1 [15 ounce] can baby peas, drained
2 eggs, hard-boiled and chopped
1/2 green pepper, chopped
1/2 cup chopped onion
1/2 cup diced American or cheddar cheese
3 tablespoon mayonnaise
1/2 teaspoon black pepper
3 slices cooked bacon, crumbled
Directions:
Combine peas, eggs, green pepper, onion and cheese in serving dish. Fold in mayonnaise, Season with pepper. Top with bacon. Chill overnight.
EASY FRUIT SALAD
This fruit salad is so healthy and good for you and everyone loves them. Take a picnic or a formal dinner.
Ingredients:
1 can apricot or cherry pie filling
Add fresh fruit:
Watermelon, Cantaloupe, Blueberries, Grapes, Peaches, Bananas, Strawberries, Apples, Kiwi
Directions:
Store in covered dish in refrigerator. You can make it the day ahead because the pie filling keeps it from turning brown [ any fresh fruit]. Easy and tasty
