GREEK SHRIMP PASTA

This recipe is a good company recipe.  It is easy and can be put together in seconds.  Everyone loves a good pasta and seafood.  This recipe could be done with clams, scallops or other fishes.  Serve with a green salad and hot rolls.  Surprise the family with this tasty dinner.  If the children do not care for all the ingredients, serve them pasta with butter and Parmesan cheese.

Ingredients:

2 pounds of shrimp
1 cup of white wine
1 teaspoon of minced garlic
8 ounce package of feta cheese
4 tablespoons butter
1 cup pitted black olives [ sliced]
1 cup diced tomatoes
1 pound box of spaghetti [ could use any type of pasta or rice/orzo]
1 tablespoon of white pepper or to taste
1 package fresh parsley - chopped

Directions:

In a hot skillet saute shrimp in butter and garlic.  Add white wine and reduce for approximately two minutes.  Add tomatoes and black olives and simmer for one minute. Be careful not to overcook the shrimp as they will be tough.  Meanwhile, cook the pasta and drain.  Then sprinkle in the crumbled feta cheese, reserve a 1/2 cup feta for topping.  Combine cooked pasta and crumble feta cheese with previous ingredients.  Toss and serve in a large pasta bowl.  Garnish with fresh chopped parsley and reserved feta.  This recipe serves approximately 6 to 8 people.

If seafood is an issue in the family as to allergies, you can substitute chicken strips or diced pork.  You can also add asparagus and fresh green peas or other types of beans.
