ZUCCHINI RIBBON SALAD

This is a perfect salad for summer months because the ingredients can be grown easily in your yard or bought fresh from he market.  This is a salad that looks pretty and can be made ahead except for the dressing.  Most of these ingredients can be bought already sliced or diced, but you can prepare yourself, but for the busy Mom or working wife, then this is a good choice for ease and quickness. 

Ingredients:
1/2 cup pre-diced fresh tomatoes
1/2 cup matchstick carrots
1/3 cup pre-sliced green onions
1/4 cup balsamic vinaigrette
1/ tablespoon basil herb paste
1/4 cup crumbled Gorgonzola cheese
2 medium zucchini [ rinsed]

Directions:
Combine all ingredients except zucchini in salad bowl.
Cut zucchini into 3 or 4 inch-long sections.  Using vegetable peeler, cut thin lengthwise strips of zucchini and put into bowl.  [Peel until reaching core with seeds; discard inner portion.]
Toss everything together and chill until ready to serve.

This salad is good with fish and you can use this coating for any fish, but it is particularly good with salmon. 
Coating for Fish
Ingredients:
1/4 cup whole smoked almonds
2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon garlic pepper seasoning
1 large zip-lock bag.  [Rub can be doubled for larger groups}

Directions:
Place almonds in a large zip-lock bag and crush, using a meat mallet or rolling pin until they are the size of coarse breadcrumbs. 
Add chili powder, paprika, and garlic pepper to bag.
Shake really well. 
  • Take any fillet of fish and place in the bag.  Shake well until fish is coated.
In a preheated large saute pan on medium heat, cook the fish for 3 to 4 minutes on each side or until flakes with a fork.
Cook time may vary depending on the size of the fish

Extra surprise:
1/4 cup maple syrup
1 tablespoon light soy sauce
After cooking the fish, remove fish from pan and add the above ingredients to pan; simmer for 1 to 2  minutes until sauce begins to thicken.  Serve over fish.

Serve with rolls or flat bread and you have a complete, nourishing meal for the family.
