What is a great solution for a light healthy lunch or supper? Well, the answer is a good salad. Salads come in many shapes and sizes; some are for show; some are for taste, but all are good for the person eating them. They provide daily fiber and healthy vitamins.
Let’s start with a pretty and tasty salad that can be a treat for lunch or an added delicate taste for the fancy dinner.
POPPY SEED SALAD
Ingredients:
1 or 2 heads of Boston Lettuce or Bibb Lettuce
A medium package of strawberries
A package of blue cheese crumbles
A package of walnuts
A bottle of Poppy Seed Salad Dressing
Directions:
Wash and prepare lettuce into small bites or leaves
Wash and half the strawberries
Put in a big bowl or individual bowls the lettuce and strawberries Sprinkle with blue cheese crumbles, walnuts and drizzle with the Poppy Seed Dressing.
VEGETABLE SALAD
Ingredients:
Medium Zucchini Squash- diced
Medium Yellow Squash - diced
Medium Red Onion, thinly sliced
Snow Peas
Broccoli Florets
Cauliflower Florets
Cucumbers, thinly sliced
Yellow, Red, or Green peppers
Marinate these vegetables in Raspberry Vinaigrette Salad Dressing.
Do not marinate very long because vegetables will get too soft and will not be crunchy.
