Holiday recipes

Trying out new recipes is a lot of fun and also a challenge. Holiday recipes are especially good to bake. The smell of the desserts fills the house. The list of recipes is endless. Below are a few family favorites and websites where you can find many more.

Sweet Potato Casserole:
Mix together 3 cups mashed sweet potatoes, 1/2 cup melted butter, 2 eggs lightly beaten, 1/2 cup milk, and 1 cup brown sugar. Mash the potatoes and mix all of the ingredients together. Put it in a casserole dish and bake at 350 degrees for 15 to 20 minutes. For the topping, mix 1/2 cup brown sugar, 1 cup chopped nuts and 1/3 cup of flour together. Add to the mixture 1/3 stick melted margarine. Bake for 15 more minutes. This recipe can be found at www.southernfood.about.com.

Honey Almond Green Beans:
Using 2 pounds of frozen French Style Green Beans, add a mixture of 1 tablespoon of honey and 2 tablespoons of softened butter. Boil the green beans until tender. Top with 2 tablespoons of sliced almonds. This recipe can be found at www.bettycrocker.com/recipes.

Chicken Bake:
Put 1 box of Uncle Ben's long grain and wild rice and seasoning (long-cooking type) in the bottom of an oblong pan. Place 5-6 chicken breasts on rice. Mix 1 can of Campbell's cream of mushroom soup. Add Lipton's onion soup and 1 1/2 cups of water. Pour this mixture on top of the chicken and rice. Cover pan with foil for 1 hour. Uncover and cook at 350 degrees for another 1/2 hour.
